So let me catch you up!
Since May, I have been dealing with a sinus infection/ear infection. I have been on multiple antibodics, but nothing seemed to be working. I can not even begin to describe how I was feeling, terrible does not even come close to how I felt. And I was tired-- a nap became a daily thing. I was drained. Then we found out that my ear infection might have abscessed and is starting to spread into my head (not brain, head). So I would need a C.T. scan to determine if it did and where exactly it was going- plus being admitted to the hospital for IV antibodics. EEP~ I was put on a different antibodic until the C.T. was completed and I had all but 2 side effects from it-- but it worked. =]
So I am finally on the road to recovery. I still have some "rough" days but nothing like it was-- like if it is hot my ear might ache a little, or when the weather changes...
My big news--- I am now a Thirty-One Gifts consultant!! =]=] I am LOVING it so far! I have met some amazing people and get to spend even more time with the people that already know. Plus it gives me a little me time.. ;) check out www.mythirtyone.com/coover you won't be disappointed.
I also decided that I need to make an effort to exercise. I think it will help me feel better- so tonight I went for a walk. I headed out the drive, saw that there were about 20 calves (500 pound!) in the ditch. FYI- we do not fence our ditch, however I should suggest it. I got them all into the bale yard, there is a fence but no gate--at least they aren't in the road right-- and keep walking. On the way back they are all back in the ditch. Sheesh! Repeat into the bale yard-- and start walking back to the house. Once on the porch steps, I turned around and they had all followed me into the yard. Obviously, this was a job for the farmer. So I did what I do best "There are cows in the yard!!!" hehe--

Chicken Parmesan
1 lb. chicken breast
1 package spaghetti noodles
1 jar spaghetti sauce (homemade or bought)
½ c. milk
1 c. Italian bread crumbs
¼ t. black pepper
¼ t. parsley
½ t. garlic powder
¼ t. season salt
Directions:
Pound chicken breasts to about ½ inch think.
In a small bowl mix milk, season salt, pepper.
In another small bowl, mix bread crumbs, garlic, parsley.
Dip chicken in the milk mixture then place into the bread crumb mixture. Cover all sides of the chicken. Place on a greased baking sheet. Bake for 20 minutes at 375. (Give or take depending on your oven)
Boil water—add a pinch of salt.
When water is boiling add noodles and cook according to package directions. Drain and add sauce.
